Typical of my generation and of the Brooklyn persuasion, if asked my favorite meal of the day, it would easily be brunch. Omelets, hash browns, bacon, French toast, and even cocktails… I practically live for it. It’s honestly not a Sunday morning if it doesn’t involve some sort of breakfast sandwich. It’s my kryptonite.
So really, why deny who I am? From now on, Sundays at Breakfast in Bed(stuy) are all about brunch… the recipes I love and think you should try or at least drool over while reading!
Today’s edition is a quick yet decadent recipe: Challah French Toast with Strawberry Compote!
Not going to lie, given the choice between pancakes and French toast, the French will always win (no one should be surprised that something French consistently steals my heart). In my humble opinion if you’re going to make French toast, Challah bread is the only way to go.
A good slice of Challah, rich with eggs, dunked in a milk-egg mixture spiced with cinnamon and nutmeg and crispy on the griddle… it’s a perfect brunch dish and easy to whip up.
While this French toast is amazing on it’s own with a little syrup, it goes perfectly with this strawberry compote.
You’ll need: a pint fresh strawberries, cleaned and hulled, ¼ cup water and ¼ cup sugar. Combine in a saucepan and cook until the mixture has thickened.
This compote goes great with plain yogurt too!
Spoon over your french toast, sprinkle powered sugar on top and serve with a side of bacon! You’ll be going back for seconds and thirds I can guarantee it.
