Happy Fourth of July! Today I bring you one of the easiest dishes perfect for any summer barbecue: Frito Pie! You’ll definitely want to add this to your summer bucket list.
I first had Frito Pie a few years ago at a cook out and while the menu included a whole roasted hog, this was definitely the stand out! It’s a mix of down and dirty comfort food meets fast food and a classic truckstop favorite in the Southwest. I can’t say I often eat and or cook with Fritos but this is definitely what they were made for.
For this Frito Pie, you’ll need ONLY five ingredients: a bag of Fritos, chili (homemade preferred), mexican cheese blend, sour cream and red onion or green onions (or both!). And it pretty much will be ready in ONLY two steps.
Step 1: Make chili – my favorite chili is a simple mix of ground beef sautéed with taco seasoning, and simmered with red kidney beans and crushed whole, peeled tomatoes.
Step 2: Assembly. While you can bake the fritos and chili in more of a casserole type fashion, I prefer the “walking taco” as I’ve heard it described…
Cut your frito bag in half for two perfectly portioned servings. Top with chili and garnish with sour cream, cheese and red onion. Dig in!
And while this is perfect for a large group of people at say a summer BBQ — personal Frito Pies would be great for a potluck — it’d also be a great dish for a Superbowl party or tailgate! Fritos topped with chili and sour cream just scream celebration… either for your country’s independence or favorite sport team’s win!
