White Pizza with Caramelized Onion and Mushrooms

A couple weeks ago, my roommate suggested we make this recipe for a white pizza with caramelized onions and mushrooms she had found. It was quite a production to actual get the damn thing in the oven, let me tell you. We started cooking super late, scrambled to find onions when our local grocery store mysteriously didn’t have any and couldn’t figure out our Pillsbury pizza crust from a can… But, that’s what happens when two girls cook together in a small Brooklyn kitchen in sweltering heat while binge watching Pretty Little Liars… Things go awry, people.  Anyway, after much drama, this was hands down one of the best meals we’ve had in the apartment – this pizza is delicious and super, super simple!

So this past weekend, in 90+ degree weather, craving comfort food, I decided to make this pizza again…. But this time with a homemade dough!

I’ve been on a homemade bread kick lately and so making pizza dough from scratch seemed like the perfect next step… mind you, I don’t have a pizza stone so this wasn’t a classic thin crust pizza but more of a focaccia bread (but super, super delicious in any event!).

Seriously, run, do not walk to your grocery store to get the necessary ingredients! This pizza is amazing! Caramelized onions and mushrooms… a cream cheese white sauce… a crunchy pizza crust (either homemade or pre-bought)… really you can’t go wrong! Plus the fact I’ve made this twice in the past month should say something!

White Pizza with Caramelized Onion and Mushrooms

Adapted from Budget Bytes and Martha Stewart Living

Pizza Dough

¾ cup water

1 packet dry active yeast

1 tbsp sugar

¼ cup olive oil

1 tsp coarse salt

2 cups all-purpose flour

Sprinkle yeast into ¾ cup warm water in a large bowl. Let stand until foamy, about five minutes.

Whisk sugar, oil and salt into the yeast mixture. Add flour and stir until dough forms.

Transfer dough to an oiled bowl. Cover with a towel or plastic wrap and set aside in a warm place. Let sit for about 1 hour or until dough has doubled in size.

Knead once or twice before using.

Toppings

2 tbsp olive oil

1 large yellow onion, thinly sliced

8 ounces mushrooms, thinly sliced

salt & pepper

Sauté the onions in a skillet over medium high heat with 2 tbsp of olive oil. Cook until golden brown, about 20 minutes, stirring frequently. Set aside.

Sauté the mushrooms, about 10 minutes. Combine with onions and set aside until ready to use.

Sauce

1 tbsp butter

1 tbsp minced garlic

4 ounces cream cheese

½ cup milk

¼ tsp salt

2 tbsp pesto

½ cup shredded mozzarella

Melt a tbsp of butter over medium heat. Add the minced garlic and sauté until golden brown, about 1 minute. Add the cream cheese, milk and salt, stirring until smooth. Whisk in the cheese and pesto. Set aside until cool.

Assembly

Top your pizza dough with sauce, onions and mushrooms and a generous heaping of shredded mozzarella cheese.

Bake at 425 degrees F for 17-20 minutes or until the crust is golden brown.
