Last weekend, our fish from the Mermaid Garden CSF was swordfish (along with the awesome squid we got). The first week of our CSF we got nice swordfish fillets and we marinated, seared and roasted them. They were amazing!
This swordfish steak was HUGE — I sliced it in half it was so big!
So this past weekend, faced with swordfish again, I searched for inspiration to make an equally awesome meal. I decided to make swordfish tacos with a corn and tomato salsa! Let me just say this was completely improvised and my roommate said it was probably the best meal we’ve had thus far! Winning!
For the swordfish, I basically replicated the prior preparation – a marinade of salt, pepper, garlic and olive oil and then searing and roasting it. I mean, when something works (and by that I mean is amazingly delicious), why change it?
Served with a corn tomato salsa (with a little red onion), and sliced avocado and you’ve got a great meal! This may be one of my go-to summer party dishes!
