A Home-Cooked Meal in a “New” Home: Penne with Tomato, Cream & Five Cheeses

I’ve been in this Brooklyn apartment for a while, subletting, but it’s now official – I’m on the lease with a brand new (awesome) roommate, Ashley! We are making the apartment our own – I am officially moved in with ALL my kitchen stuff and we now have a microwave (which honestly is changing my life after being without one for a few months).

As the apartment is clean and gorgeous with the process of unpacking boxes and bins galore is over, I figured I’d show off our lovely digs!

And to commemorate a new apartment with a new roommate/friend, I decided to make a pasta dish I recently came across: penne with tomato, cream and five cheeses. Mmmm five cheeses!

Breakfast in Bed(stuy) / Penne with Tomato, Cream & Five Cheeses

Penne with Tomato, Cream and Five Cheeses

Adapted from Food 52

2 cups heavy cream

1 cup chopped canned tomatoes

½ cup pesto

½ cup pecorino Romano cheese

½ cup coarsely shredded Fontina cheese

¼ cup crumbled Gorgonzola cheese

2 tbsp ricotta cheese

½ cup shredded mozzarella cheese

¾ teaspoon kosher salt, plus more for pasta water

1 pound penne pasta

6 fresh basil leaves, coarsely chopped

½ stick unsalted butter, sliced thinly

Preheat oven to 500 degrees. Bring a large pot of salted water to a boil. Cook according to package directions.

In a mixing bowl, combine cream, pesto and tomatoes.

In a separate mixing bowl, combine cheeses.

Stir cheese into milk mixture. Add pasta, tossing to combine.

Transfer to a large shallow baking dish. Dot with butter and torn basil leaves.

Bake until bubbly, 7 to 10 minutes.
