A Classy Breakfast: Elegant Baked Eggs

I will be honest – out of everything I’ve made over the past six months, this recipe has been by far the most satisfying!

To prepare this dish, (which if you do anything today, I would say it should be to make this!), you crack an egg into a ramen, add any fillings, top with cream and then poach it until the whites solidify and the yolk is still runny.  The egg is creamy and rich and the combination of the cream and the spinach and the cheese I added made it decadent and velvety. Toast some bread and dip the pieces to scoop up every last bite! I had to stop myself from licking the whole ramen clean, this was so good. Better yet, the possibilities to this recipe are endless – add any filling you like (herbs, vegetables and cheese etc).

Even though I’ve had this several times since first making it, my mouth still waters at the thought of this dish (seriously! it’s so delicious!).

Call it by the fancy french name – “ouefs en cocotte” – or the simple “baked eggs,” or even “shirred eggs,” but whatever you call it, you will enjoy it all the same!

Elegant Baked Eggs

Adapted from My Recipes

(for an individual serving)

1-2 tbsp of desired fillings – I chose spinach
2 eggs
1-2 tbsp heavy cream
salt and pepper to taste
1 tbsp havarti cheese

Preheat oven to 350˚F.

Crack eggs into a buttered ramekin.

Top the eggs with spinach and cheese. Pour in the heavy cream and season with salt and pepper.

Place the ramekin in a baking dish and pour boiling water into the dish, about one-third up the side of the ramekin. (This is called a bain-marie or a water bath. It creates a gentle and uniform heat around the dish to promote slow and even cooking).

Bake for about 10 to 15 minutes, or until egg white sets. This timing depends on how you like your eggs cooked.
