Shepherd’s Pie

The other evening, home in Maryland for the holidays, we decided to make Shepherd’s Pie for dinner — beef & veggies baked with mashed potatoes on top, what could be better? It is the epitome of comfort food!

A British classic, shepherd’s pie is a peasant meal at it’s heart – a way to use leftover meat and vegetables. I like the rationale behind dishes and this makes perfect sense! Veggie-wise we used the classic carrot, onion, celery mixture, but we also added leeks and you could add any vegetables you wanted (or needed to use up rather).

But to nit pick shepherd’s pie is technically made with lamb whereas “cottage pie” is the favorite made with ground beef. But, nowadays, most people call it sheperd’s pie regardless of the meat used — though as I learned, if you use turkey and ham (that combo seems weird to me but whatever), it is called St. Stephen’s Day pie, who would have thought? Another fun fact, in Finnish, the dish is called, “lihaperunasoselaatikko” — can I learn Finnish? How does one even say that name?!

And apparently, in Tanzania they use a breed of stray cat (calling the dish feline pie)… 1. I’m not sure if I really believe this and 2. Sorry if this fact is disgusting… let’s just forget it and move on to the recipe/food porn!

Shepherd’s pie or Cottage pie, it is seriously good!

Shepherd’s Pie 

Adapted from Simply Recipes

Preheat oven to 400˚ F.

Peel and quarter potatoes, boil in salted water until tender (about 20 minutes). When tender, mash potatoes with butter and milk to desired flavor and consistency.

Sauté vegetables in butter or oil until tender over medium heat. Season with salt and pepper.

IMG_2504Sauté seasoned ground beef until no longer pink.

Add beef to vegetables. Add Worcestershire sauce and beef broth and cook over low heat, uncovered.

Add beef and vegetable mixture to a baking dish and distribute mashed potatoes on top. Create peaks in the potatoes that will brown in the oven with a fork.

Bake for 30 minutes or until golden and bubbling.

  • 4 carrots chopped
  • 4 celery stalks chopped
  • 3 leeks chopped
  • 3 large potatoes
