Cauliflower Mac and Cheese Inspired by First Lady Obama

First of all, Nov. 6th has come and gone and I am happy and relieved that Obama was re-elected. I won’t really get into politics (as I couldn’t even vote this election – a long story but having been displaced by Hurricane Sandy it was a huge mess trying to vote — I am not proud that I couldn’t and I would have really liked to but c’est la vie). Anyway, my house in South Orange is still without power and I have been luckily staying with my aunt (since the storm mind you). Thank you Aunt Rebecca! We are hoping the power is restored soon… but who knows when it will be!

Last night, dying to cook and to celebrate the election, I made the First Lady’s Cauliflower Mac and Cheese. It was a super easy weeknight meal. I almost never eat cauliflower so it was also a great way to eat some veggies.

Mac and Cheese + Thursday TV (Greys, Scandal, plus all the other shows i have to watch online the day after) = perfection.

Cauliflower Mac and Cheese

1 pound pasta (I used fusili)
1 cup milk
1 pound shredded cheese (I used cheddar and a Swiss/Gruyere mix)
1/2 head cauliflower, cut into florets
Salt and pepper to taste
*toasted breadcrumbs on top (optional)

Preheat the oven to 350º.

Bring salted water to a boil and cook the pasta until al dente. Bring water to boil and cook cauliflower until soft. Mash and add to cooked pasta.

In a medium size pot, combine the pasta and hot cauliflower puree. Add the milk, both cheeses, and season with salt and pepper to taste. Transfer to casserole dish.

Bake 20 minutes until the top is crispy and the sauce is bubbling.
