Baked Pumpkin Spice Donuts

I’ve been wanting to make donuts for a LONG time. I pass donut pans every time I go grocery shopping and I’ve kept telling myself I’ll buy them the next time (because let’s be honest, making donuts without donut pans is a little difficult).

Well this weekend, in the process of buying ingredients with Kate for pumpkin white hot chocolate, I decided to finally buy the pans and thus make donuts (I already had my recipe all picked out and everything). Funny enough, the one time I actually want said donut pans they had disappeared from the store. I swear Kate thought I was crazy (though the jury is still out on that one).

Not to be defeated, I made a special trip to Bed, Bath and Beyond (Triple B as we call it) -and bought adorable pans! Look at the one for mini little donuts! True dedication!

Thus donut pans in hand and ingredients purchased, I set out to make pumpkin spice donuts.

Place the oil, sugar, spices, pumpkin, and baking powder in a mixing bowl and beat everything together until smooth.

Add 1¾ cups + 2 tsbp flour, stirring just until smooth.

Grease two standard doughnut pans. Fill the wells of the doughnut pans. (This was a little difficult to do. I might try piping the batter into them next time).

Bake the doughnuts for 15 to 18 minutes at 350 degrees F, or until a cake tester inserted into the center of one comes out clean. For mini doughnuts, bake for 5 to 6 minutes. Remove the doughnuts from the oven, and after about 5 minutes, loosen their edges, and transfer them to a rack to cool.

While the doughnuts are still warm (but no longer fragile), gently shake them in a bag with pumpkin-spice/sugar.

I will most definitely try other donut recipes in the future now!

Baked Pumpkin Spice Donuts
 
Ingredients
  • ½ cup vegetable oil
  • 3 large eggs
  • 1½ cups granulated sugar
  • 1½ cups pumpkin purée
  • *1½ tsp pumpkin pie spice
  • 1½ tsp salt
  • 1½ tsp baking powder
  • (*or use ¾ tsp ground cinnamon + a heaping ¼ tsp each ground nutmeg & ground ginger)
Instructions
  1. Place oil, eggs, sugar, baking powder and spices in a mixing bowl:
